Pumpkin Waffles

2 cups all-purpose flour
1/4 cup sugar
1 T. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt
2 eggs
1 1/2 cups milk
4 T. butter, melted
1/2 cup canned pumpkin


Combine the first 5 ingredients and mix well. Add the remaining ingredients and mix well. Spray a pre-heated waffle iron with non-stick cooking spray. Pour 1/4 cup batter for each waffle onto the waffle iron. Cook according to manufacturer's instructions (approx. 4 to 5 minutes).

I made these this morning with half white and half wheat flour. They were really good. I thought about adding walnuts but then it would not be as frugal as it is.

I also made a double batch so I could freeze them.
