This creamy chicken with diced green or red peppers makes a perfect topping for rice or potatoes, and is a family favorite.

Ingredients:1 tbsp. margarine OR butter
1/4 cup chopped green OR red pepper
1 can (10 3/4 oz.) Cream of Mushroom Soup
1/2 cup milk
1 1/2 cups cubed cooked chicken OR ham
4 cups hot cooked rice


Directions:
1. In medium saucepan over medium heat, heat margarine. Add pepper and cook until tender.

2. Add soup, milk and chicken. Heat through, stirring occasionally. Serve over rice. Serves 4.

Tip:
For 1 1/2 cups cubed cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 3/4 pound skinless, boneless chicken breasts or thighs, cubed, 5 min. or until chicken is no longer pink.

I tried this one last night,added a little Mrs. Dash to mine,but it was yummmmmmmmy!:lip:
