Rainbow Cake/Cupcakes


Recipe Description
A fun twist - and sometimes a shocking surprise - to an old favourite.​
Preparation Steps:
Level of Difficulty:
Easy​
Time Needed:
1-1/2 hrs approx​
Ingredients:
* box of white vanilla cake mix
* gel food colouring
* icing/frosting - homemade or canned​
Serves:
2 x 8" cake rounds OR 18 large / 24 med-reg cupcakes​
Directions:
Decide if you want one cake or several cupcakes. Grease & flour cake pan or line muffin cups for cupcakes.

Prepare the white vanilla cake mix according to package directions.

Divide the batter equally into 5 bowls, add in gel food colouring to your desired brightness. Stir well to ensure all gel has been dissolved.

FYI - Gel colouring is more vivid and intense but you should add a bit more then you'd like as the baking may tone it down a notch on you.

TIP - use a disposable utensil to scoop colour out of the mini container it comes in...its very intense and does stain. My fingers were multi-coloured for a few days and my chopsticks have yet to return to their natural bamboo colouring. (to make green: mix yellow & blue / to make purple: mix red & blue / to make orange: mix yellow & red)

FOR CAKES: pour entire contents of one bowl of batter into centre of cake pan and let it spread out naturally on its own. Repeat with the remaining bowls until all are in the pan. Always pour in the centre and allow it to spread naturally. This layers the colours.

FOR CUPCAKES: Add one - two tbsp of each colour into liner until all colours have been layered and allowed to spread naturally. Cup should be filled halfway to 3/4 way full max to allow room for rising unless you want jumbo steroid cupcakes.

Bake according to box directions, let cool before icing/frosting.

I iced each cupcake as well as baked them in foil metallic liners to help hide the surprise until they were being eaten.​

I've never made rainbow cakes before but I've seen some cool pics of them.

I should really try this. Thanks. :)

This is awesome! I was just looking up how to do this tonight and viola, you make a post!!!

Something else cool to this would be to dye buttercream into rainbow colors and pipe it around the cake, and when you smooth it out it will look like a rainbow! I will try this and post a pic sometime next week!
