Raspberry Truffles


Recipe Description
These are so simple to make and they look and taste like you bought them at a fancy candy store.

They are not good for children since there is liqueur in them and it doesn't cook out but they are really decadent for adults.

If you don't have the raspberry liqueur, the Framboise is usually cheaper than the Chambord and they taste very similar. You can also see if your liquor store has those little tiny bottles ~ I do that if I need something that I know I am not going to use very often.

You can roll the balls in just about anything ~ I had cocoa powder and confectioner's sugar so that's what I used.​
Preparation Steps:
You will need a double boiler for this recipe. If you don't have one (like me), just put a bowl on top of the pan you are simmering the water in ~ works like a charm. I'll post a picture so you can see what I mean.​

Ingredients:
8 ounces semi-sweet chocolate
6 tbsps unsalted butter
1/2 cup seedless raspberry jam
3 1/2 tbsps raspberry liqueur, such as Chambord or Framboise
Cocoa powder, confectioner’s sugar, finely chopped nut, coconut​
Serves:
35-37 truffles depending on size​
Directions:
In a double boiler, melt chocolate over simmering water.

Remove from heat and add jam a liqueur. Stir well but do not over mix.

Refrigerate until firm. Shape into balls (use a melon baller or small cookie scoop) and roll in cocoa powder, confectioner’s sugar or whatever you choose.

Makes about 35-37 truffles depending on size.

They are better if kept in the refrigerator.​

I saw your avatar before you posted and thought they were donut holes. ;) Now I see it's something even more delicious. What kind of camera/lens do you use for your photos?

Now you have me thinking about donut holes :)

I use a SONY Cyber-shot 8.1 ~ it's a great little camera ~ much better than my old one. It's not expensive but it has loads of settings. I think it was less than $200 but I am not sure about that because DH dropped my old one in the lake and killed it so he had to go buy me a new one :D

I also have a lighting kit ~ lights and background ~ that really help, too. I only use the macro setting for food pictures so I don't need any extra lenses except the one that came with the camera ~ at least for the food pics I take.

I'm just seeing this now Nancy--thanks for posting! It figures I just went to the grocery store earlier today. I may not be able to make these in time for Valentine's Day, but I will make them soon :D
