If you don't already make this give it a try. Very easy. If you can chop vegetables and turn on a stove, you can make this!
There are many other ways to cook this dish, this is my way.

This is a staple in my kitchen. Summer squashes and eggplant are abundant and cheap in summer and I make huge pots of "rat" and freeze it in small containers for eating the rest of the year. It's good plain or on pasta or rice. I also add it to jars of store bought pasta sauce to make it more chunky.

Any quantities of:
zucchini and/or other summer squashes
diced tomatoes
minced garlic
Can add bell pepper also.

Chop all this up and put in a big pot with some olive oil (or veg oil).

I add some spices such as basil, oregano, parsley.
Cover and cook til done (45-60 min). Easy and delicious.
