I make mine with a mince onion sauteed, add a can of pintos (juice and all) and then add a few cups of white rice. I season with adobo. Anyone do it difefrent?

This is the recipe that I use that I got from my grandmother.
1 can beans (your preference)
4 ounces tomato sauce
1 tablespoon sofrito
salt to taste
1 teaspoon olive oil
olives (optional)
1 small potato peeled and diced
1 envelope sazon seasoning powder
1 cup water
½ cup cooking ham diced

Oh, the olives are a great idea! What is sofrito?What is sazon?

Sofrito and Sazon are both popular latin sauces/spices. I make my own Sofrito, but buy my sazon(Goya) from the store.

Sofrito Recipe...
1 large onion
1 large pimiento del país or bell pepper
1 medium head of garlic
1 bunch of cilantro
12 ajíes dulces (hard to find and may skip)
6 leaves of recao - (Eryngium) (hard to find/skip)
1 small jar Pimientos Morrones/roasted red peppers
¼ cup olives
1 tbsp cappers
2 tsps salt
1 tbsp black pepper
1 tbsp crushed orégano
½ cup olive oil

Wash, peel, seed and coarsley chop everything. Put in a blender and pureé. Store in a glass jar covered in the refrigerator for later use. Freeze it in ice-cube trays and dump the frozen cubes in a freezer bag. This recipe makes about 2 large ice-cube trays. Use about 2 cubes for rice or soup that will serve a family.

Sazon typically include coriander (cilantro), annatto (achiote), garlic and salt. The seasoning is used to flavor meats, fish, poultry,soups and stews.

More of a rice/bean casserole

2 C cooked rice
2 C cooked beans
can diced tomato
can green chiles (could use rotel)
diced onion and green pepper
chili powder, cumin, oregano and jalapeno to taste
you can throw in leftover meat if you have it too

Saute onion and green pepper, add rice and beans to pot, stir in tomato, chile and spices. Heat through

Black Beans and rice

1 medium onion chopped
1Tbls. oil
1 can 14 oz. diced tomatoes
1 15 oz can black beans (or soak your own need about 2 cups)
1 tsp. oregano
1/2 tsp garlic powder (I use 2 cloves of garlic, minced)
1 1/2 cups Minute instant rice (I have used precooked long grain rice)

Cook and stir onion in hot oil until tender, but not browned. Add Tomatoes, beans, oregano and garlic. Bring to a boil. Stir in rice. Cover, reduce heat and simmer for 5 minutes. Remove from heat and let stand 5 minutes. Makes 9 servings.

I like to put cheese on the top of mine and eat it with tortilla chips as a dip.

For some added zip you could add some green chilis.

This is super easy and super fast to make. Also a great way to use up leftover rice.
I have used long grain white rice and brown rice and have had great results.

I don't really have a recipe. I usually start out cooking some coarse chopped onion, celery and sometimes carrots in a tablespoon or so of olive oil. Then I add some broth (usually beef) and about a cup of brown rice. I let it cook till the rice is done and most of the liquid is absorbed. Then I add cooked black beans. Seasoning depends on what kind of mood I'm in and what I have on hand. Usually lemon pepper, a little chili powder, a dash of cayenne, a couple of garlic cloves and a couple of squirts of balsamic vinegar. Sometimes I add meat, but often don't.

No tomatoes at our house.

I am on a kick where I am sneaking veggies into everything I cook. I made rice and beans and added pureed cooked cauliflower. It made the texture creamy. Tasted great.

Here's how I make rice and beans.

1 c. kidney beans
1 c. black beans
1 c. pinto beans
1 -2 cans chopped tomatoes w/chilis (depending on how soupy you like it)
1 mini can Mexican corn (with the little red and green peppers in it)
Chili powder to taste
Garlic salt to taste

Dump it all in a large sauce pan and heat through. Add chili powder and garlic salt about 1 tsp. at a time until it's just how you like it. Let it simmer about 30 min.

Top with shredded cheddar cheese and/or sour cream and serve over rice (or on fresh made tortillas).
