CROCKPOT BLACK BEAN AND SMOKED SAUSAGE SOUP

1 lb black beans
8-10 cups water
2-4 T. oil or butter
2 medium onions, diced
3 stalks celery with leafy tops, diced
2 pkg of taco seasoning (I use my own homemade mix)
2 c cooked rice
2 can mixed vegetables or corn (or 1 of each)
2 cans diced tomatoes (can use regular, with chiles or Rotel style)
3 cans beef broth
Salt and Pepper to taste

The night before you plan on eating, place beans in crockpot 6-qt crock pot. Cover with water and let beans cook all night on low. In the morning, turn on high and let cook till beans are tender. When tender, add taco seasoning, vegetables, taco seasoning, tomatoes and beef broth. Cook till flavors meld. Season with salt and pepper if desired. Can turn down to low to keep warm if needed. Serve with cornbread or homemade crusty herb bread.

1 pkg smoked sausage, cut into small cubes
Salt and Pepper to taste

The night before you plan on eating, place beans in crockpot 6-qt crock pot. Cover with water and let beans cook all night on low. In the morning, add the celery and onion and turn on high. Cook till beans are tender. When tender, add taco seasoning, vegetables, taco seasoning, tomatoes, smoked sausage and beef broth. Cook till veggies are done and flavors meld. Season with salt and pepper if desired. Can turn down to low to keep warm if needed. Serve with cornbread or homemade crusty herb bread.
