For those liking rhubarb and wanting something different, here you go!!

4 c. chopped rhubarb
1 c. sugar (I always use less sugar than is required)

Spread in regular size cake pan.

Prepare a white cake mix (purchased on sale of course). Over the rhubarb mixture, spread 3 c. miniature marshmellows and then pour the cake batter over top.

Bake at 350 degrees for 40 minutes.

Yummie!!

Perfect timing cj, I have rhubarb ready to pick.:) MIL gave us some last year to plant & this is our 1st harvest. I just have a couple of questions cj.~
Do you cook the rhubarb and sugar 1st or put it in raw?
When you say reg cake pan are you talking 9"round ?

Darlene, no you do not cook the rhubarb or sugar first. Just mix it well.

To check to see what size cake pan you need, look on the back of your cake mix that your using. I always check there to see what size it suggests.


Darlene, our rhubarb is the first we had this year too because we planted it last year. I think next year, we should even get a larger amount. A neighbour gave me some last week, so I froze it until I was ready to use it today, making jam!!

Yum, thanks cj! My in laws were away for a bit and came home to find that their rhubarb patch exploded (gone to seed). Huge elephant ear leaves. Huge! Enjoy your jam!:)
