Saucy Potato Galette
Recipe Description
Creamy, saucy side dish.
I've also made this with some cream of herb soup instead of the cream and without cheese and it's pretty good!

Ingredients:350g potatoes, thinly sliced
350g sweet potatoes peeled and thinly sliced
500g carrots, thinly sliced
50g butter
1 tbsp oil
1 lrg onion, chopped
3 cloves garlic, chopped
300ml single cream
50g mature cheddar, grated
chopped parsley to garnish

Directions:Cook the potatoes, sweet potatoes and carrots in a flameproof casserole filled with boiling water for 6-8 minutes. Drain.
Dry the casserole then heat the oil and butter. Fry the onion and garlic for 3-4 minutes until softened.
Layer the potatoes, sweet potatoes and carrots in the casserole. Mix the cream with a little seasoning, pour into the dish and cook on the hob for 2-3 minutes. Sprinkle over the cheese and grill for a few minutes until melted and golden.
