Saucy Potato Galette

Recipe Description
Creamy, saucy side dish.

I've also made this with some cream of herb soup instead of the cream and without cheese and it's pretty good!​
Preparation Steps:

Time Needed:
40 minutes​
350g potatoes, thinly sliced
350g sweet potatoes peeled and thinly sliced
500g carrots, thinly sliced
50g butter
1 tbsp oil
1 lrg onion, chopped
3 cloves garlic, chopped
300ml single cream
50g mature cheddar, grated
chopped parsley to garnish​
Cook the potatoes, sweet potatoes and carrots in a flameproof casserole filled with boiling water for 6-8 minutes. Drain.

Dry the casserole then heat the oil and butter. Fry the onion and garlic for 3-4 minutes until softened.

Layer the potatoes, sweet potatoes and carrots in the casserole. Mix the cream with a little seasoning, pour into the dish and cook on the hob for 2-3 minutes. Sprinkle over the cheese and grill for a few minutes until melted and golden.​
