Scallion pancakes

Recipe Description
Asian comfort food. :) I love these right out of the pan, and they are SO easy to make!!​
Preparation Steps:

Time Needed:
40 minutes​
2 c. flour
3/4 t. salt
2/3 c. boiling water
4 t. cold water
4 scallions
1 T. sesame oil
4 T. vegetable oil​
12 pancakes​
Mix flour and salt in large bowl.

Bring water to a boil. Immediately pour into bowl; mix w/ flour. Add cold water, knead into a smooth dough; cover with a damp cloth and let sit 15 minutes.

Clean scallions. Chop into very small pieces.

Roll dough into a 12" long sausage; cut it in half, then roll each into a thin 6" x 12" sheet. Brush with sesame oil, then sprinkle with scallions. Roll each sheet up jelly roll fashion into a 6" long sausage, then cut into 1" thick sections.

Press ends gently to seal, then flatten each section slightly. Roll into a 4" - 5" cake.

In a wok or frying pan, heat oil; saute both sides of pancake over med heat until golden.

Serve hot.​
