The pancake post made me want to figure this out....

I LOVE LOVE LOVE scrambles. My current favorite is a Southwestern Scramble. I am using my last shopping trip as a guide. However, the chicken I have been scarping of whole roast chickens, so cost is really negligible. I am pricing as though I bought chicken breast, which is $7-9/lb here.

1/8 avocado(s) - medium .16
2 tbsp(s) salsa I have home made from the garden so not sure cost. Going with .03
2 tbsp(s) onion(s) - green (scallions) .04
1 oz cheese - Cheddar (low fat, shredded/grated) .49
3 egg(s) ( I use Pure Egg whites as to not waste the yoke, and it's cheaper than eggs) .49
1/2 potato(es) - medium (6 oz) .08
1/2 chicken breast(s) (1 breast is 4 oz) 1.40

Cost $2.64

Before chicken $1.24 (more accurate as i use mostly leftovers anyway).

This makes a really hearty breakfast. It sounds like it would take a long time, but I cube a cook potatoes Sunday for 3 or 4 meals. I'll have it for lunch sometimes. Same with chicken, cooked and ready to go. So it's essentially reheating in a pan, then adding egg whites and scallions(i freeze mine) until egg whites are cooked. Toss on plate top with cheese, salsa. Ready.

You could cook everything and have containers of cheese and salsa ready to go and heat at work too.

I've never heard of a farmers omelette is. Could be the same thing? LOL. Different area, different name?

How many servings does that recipe make? it seems like it would be ro much for one person. at least.
