Shepherd's Pie

Recipe Description
Quick and easy one dish meal
Preparation Steps:
Level of Difficulty:
Time Needed:
20 minutes prep, 15 minutes cook
1 lb ground beef
1 medium onion, chopped
1 can (10 3/4 oz) cream of mushroom soup
1 Tbsp ketchup
1/8 tsp ground black pepper
1 cup frozen peas & carrots, thawed
1 packet of instant mashed potatoes
1) Preheat oven to 400 degrees.
2) Cook beef and onion in 10-inch skillet over medium high heat until well browned, stirring to break up meat. Drain grease.
3) Stir in soup, ketchup, black pepper and peas and carrots into skillet. Heat for 5 minutes on low. I added 1/4 water or milk to this mixture to make more creamy.
4) Put meat mixture in a pie plate.
5) Prepare mashed potatoes according to package directions. Spoon potatoes over beef mixture.
6) Bake at 400 degrees for 15 minutes or until potatoes are lightly browned.

A variation I've had to this uses tater tots instead of mashed potatoes. Worked out great!

I'm not excited about instant taters either. Growing up they were all but a punishment.

I only used them to feed the Sour Dough starter until this year. I tried some of the Betty Crocker ones and they were actually pretty good. MUCH better than what I remember. I think they have progressed greatly.
