Level of Difficulty:
Easy
Time Needed:
20 minutes prep, 15 minutes cook
Ingredients:
1 lb ground beef
1 medium onion, chopped
1 can (10 3/4 oz) cream of mushroom soup
1 Tbsp ketchup
1/8 tsp ground black pepper
1 cup frozen peas & carrots, thawed
1 packet of instant mashed potatoes
Serves:

Directions:
1) Preheat oven to 400 degrees.
2) Cook beef and onion in 10-inch skillet over medium high heat until well browned, stirring to break up meat. Drain grease.

5) Prepare mashed potatoes according to package directions. Spoon potatoes over beef mixture.
6) Bake at 400 degrees for 15 minutes or until potatoes are lightly browned.

I'm not excited about instant taters either. Growing up they were all but a punishment.

I only used them to feed the Sour Dough starter until this year. I tried some of the Betty Crocker ones and they were actually pretty good. MUCH better than what I remember. I think they have progressed greatly.
