Shrimp Orzo Skillet


Recipe Description
A quick and tasty one dish meal from Pampered Chef.​

Ingredients:
8 oz large uncooked shrimp
1 tbl. oil
1/4 tsp salt
1/4 tsp pepper
1/8 tsp sugar
8 oz orzo pasta
1 clove garlic, pressed
2 cups chicken broth
1 cup clam juice
1 lemon
1 tbl. thinly sliced mint fresh OR 1 tsp dried
1 cup frozen peas
1 tbl. butter​

Directions:
Peel and devein shrimp if not already done when purchased. Heat oil in a large skillet until shimmering. Combine salt, pepper and sugar in a small bowl and add to shrimp and toss to coat. Cook shrimp in skillet for one minute, turn and cook about 30 seconds longer. Remove shrimp from skillet and keep warm.
In the skillet combine orzo, garlic, broth and clam juice. Bring to a boil, cover and reduce heat to low. Cook 10-12 minutes until orzo is cooked through.
Zest lemon to measure 1 tbl. zest, juice lemon for 1 tbl. juice. Remove skillet from heat and stir in peas, butter, and lemon juice. Add shrimp, sprinkle with zest and mint and toss before serving.​
