Simple Dairy Free Pancakes
Recipe Description
These are an easy staple for me. You can also use the soy drink dry mix for these. I do not use that mix to drink but it works well in cooking and makes it even more economical.

Ingredients:1 Cup unbleached all-purpose flour
1 Tablespoon sugar
2 Teaspoons baking powder
1/8 Teaspoon salt
1 Cup soy milk
2 Tablespoons vegetable oil (I don't bother to measure this)

Directions:Mix together flour, sugar, baking powder and salt.
Add the soy milk and oil. Mix by hand, whisk or beaters. Cook on a hot pan or griddle with a small amount of oil.
