Sliced Dill Cucumbers (Sweden)


Recipe Description
This is definitely a great, crisp and delicious summer recipe. They're sweet but sharp and are definitely not pickles. This was my father's mother's family recipe from Sweden.

Sliced Dill Cucumbers (Sweden)

3 large cucumbers, peeled and sliced thin
salt

2/3 cup white wine vinegar
1/2 cup water
1/2 cup sugar
1/2 tsp salt
1/4 tsp white pepper

1 tbsp dill, dried

1. Peel and slice cucumbers then layer in a non-aluminum bowl with salt. Place in refridgerator overnight (or several hours) with a press to remove water from cukes. Once press is complete, remove from fridge, drain fluid and pat slices until dry.

2. In saucepan, heat all remaining ingredients (less dill) over medium heat until sugar dissolves. Remove from heat, cool and add dried dill. Marinade the cucumbers in the sauce and serve chilled.​
Preparation Steps:
Items needed: knife, cutting board, measuring cups/spoons, non-aluminum bowl or pan, "press" (a bag or two of flour in a sealed ziploc bag works great), refridgerator​

20-30 minutes, plus overnight "press"​

The last time I was at the produce store, the cukes were $.25...I'm giving this one a try! It sounds like it's fun to make too. :chef2:

I tried this and we liked it very much. I added some thinly sliced red onion for a bit of color. The cucumbers went limp, I don't know if I soaked them long enough, but they tasted fine. My husband loves the sweet-sour flavor, a lot like sweet pickles. Definitely adding it to our rotation of summer recipes.

I made one change, I did not cook the sugar vinegar mixture, it's warm enough here that 30 seconds of stirring dissolved all the sugar, so I did not need to cool it before putting the vegetables in. Saved a lot of time and a pan.
