Slow Cooked Southwest Chicken


Recipe Description
A yummy and easy crockpot meal!​
Preparation Steps:
Level of Difficulty:
Easy​
Time Needed:
Prep: 15 minutes, Cook: 6-8 hours​
Ingredients:
2 cans (15 oz each) black beans, rinsed and drained
1 can (14 1/2 oz) reduced-sodium chicken broth
1 can (14 1/2 oz) diced tomatoes with mild green chilies, undrained
1/2 lb boneless skinless chicken breast
1 jar (8 oz) chunky salsa
1 cup frozen corn
1 Tbsp dried parsley flakes
1 tsp ground cumin
1/4 tsp pepper
3 cups hot cooked rice​
Serves:
6​
Directions:
Combine all ingredients except rice in the crockpot. Cook on low for 6-8 hours. The amount of chicken you use can vary and the chicken can be either frozen or thawed.

About 30 minutes before serving, take the chicken breasts out and shred them with two forks. Return to crockpot until heated through.

Serve over hot cooked rice.​

I'm going to have to try this recipe. :)

One of my quirks is that I don't normally like crock pot food. Doesn't taste good to me especially if it has cream of whatever soup or onion soup mix in it. (I know, but I'm weird like that)

But this one sounds like I would like it. I will put it on next week's menu and give it a whirl. Thank you!

Sounds really good - and also that it would taste good cold or at room temperature!!
