Slow Cooked Southwest Chicken
Recipe Description
A yummy and easy crockpot meal!
Preparation Steps:

Time Needed:Prep: 15 minutes, Cook: 6-8 hours
Ingredients:2 cans (15 oz each) black beans, rinsed and drained
1 can (14 1/2 oz) reduced-sodium chicken broth
1 can (14 1/2 oz) diced tomatoes with mild green chilies, undrained
1/2 lb boneless skinless chicken breast
1 jar (8 oz) chunky salsa
1 cup frozen corn
1 Tbsp dried parsley flakes
1 tsp ground cumin
1/4 tsp pepper
3 cups hot cooked rice
Serves:1 can (14 1/2 oz) reduced-sodium chicken broth

Directions:Combine all ingredients except rice in the crockpot. Cook on low for 6-8 hours. The amount of chicken you use can vary and the chicken can be either frozen or thawed.
About 30 minutes before serving, take the chicken breasts out and shred them with two forks. Return to crockpot until heated through.
Serve over hot cooked rice.
