I made this last night. It was very good served over pasta. Very thick and rich sauce.

Slow-Cooker Sausage and Sun-Dried Tomato Sauce

1 cup dry packed sun dried tomatoes (I bought a bag of already julienned tomatoes, alleviating one step)
1 cup red wine
1 tsp. fennel seed
3 allspice berries (I used 1/2 tsp. ground allspice instead)
2 Tbsp. olive oil
1 large onion, finely chopped
3 cloves garlic, minced
2 celery stalks, finely chopped
2 carrots, peeled and finely chopped
1/2 lb. Italian sausage,sliced
2 28-oz. cans crushed tomatoes
salt and pepper to taste
1 tsp. thyme

In a small bowl, combine sun-dried tomatoes and red wine. Let soak for 30 minutes. Combine fennel seed and allspice in mortarand grind together.

Heat a large pan over medium heat and add olive oil. Add onion and saute, stirring frequently, until browned. Add garlic, celery and carrots. Saute for 3-4 minutes, until lightly browned.

Add sausage and spice mixture. Stir for 2 minutes until well blended. Add tomatoes. Drain sun-dried tomatoes, reserving wnie and cut them into thin slices. (this is where I just poured the wine & julienned tomatoes into pan) Add wine, sun-dried tomatoes and salt and pepper to taste. Stir well.

Pour into slow cooker and add thyme. Cover and cook on low for 6-8 hours, until flavors are blended and the sauce is thickness you prefer.

Serves 6

I have a newer crock ot, so it was done in 6 hours.
