Spanish Rice with Bacon


Recipe Description
Zippy rice dish with the flavor of bacon.​
Preparation Steps:
Alternate: You can alternate the green pepper, jalapeno pepper and chili powder for one package of dry taco seasoning mix and it turns out fantastic!

You can also use a can of diced tomatoes instead of fresh tomatoes.​
Level of Difficulty:
Easy​
Time Needed:
45 minutes​
Ingredients:
6 bacon strips, diced
1 tbsp vegetable oil
1 medium onion, chopped
1 cup uncooked long grain rice
1 3/4 cups water
2 large tomatoes, chopped
1 medium green pepper, chopped
2 jalapeno peppers, seeded and chopped
1 tsp chili powder
1/2 tsp salt​
Serves:
6 - 3/4 cup servings​
Directions:
In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Add oil to the drippings; saute onion for 3 minutes. Add rice; stir until golden brown, about 5 minutes. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until rice is tender. Sprinkle with bacon​

That sounds so good!

I am going to use the alternate of Taco Seasoning
Mix (mild) as the "zippy" part might be too zippy for
me.

I made this last night and it was awesome. I substituted like you suggested so I wouldn't have to spend any money and we loved it! Thank you

Next time I'm going to add some black beans, green and red peppers and maybe a few olives. Yumm!

Maybe some chicken or shrimp too. :hungry:
