Spicy Potato Strudel

Recipe Description
Sorry all the measurements are in metric!​
Preparation Steps:

1 onion, chopped
2 carrots, coarsely grated
1 courgette, chopped
850g white potatoes, peeled and chopped
65g butter
2tsp mild curry paste
1/2 tsp dried thyme
150ml water
salt and pepper
1 egg, beaten
2 tbsp single cream
8 sheets filo pastry
sesame seeds​
serves 4​
Fry the veg in half the butter for 5 minutes until soft, add the curry paste and cook for a further minute.

Add the thyme, water and seasoning, cook gently, uncovered for 10 minutes. Allow to cool then mix in the egg and cream. Chill until ready to cook.

Melt the remaining butter and lay out 4 sheets of filo, slightly overlapping them to form a large rectangle. Brush with butter. Lay the other sheets on top, brush again, put the filling on top then roll up. Sprinkle with sesame seeds and bake for 25 minutes at 190 degrees C/375F.​
