Spinach Squares


Recipe Description
Great as an appetizer or as a lunch or dinner w/a nice green salad. :chef2:​
Preparation Steps:
Preheat oven to 350º.​
Level of Difficulty:
Easy​
Time Needed:
5 min prep, 35-40 min bake time​
Ingredients:
4 T. butter
3 eggs
1 c. flour
1 c.milk
1 tsp salt
1 tsp baking powder
1 lb shredded cheddar, swiss cheese--whichever is your favorite. I've made these with both cheddar and with Monterey Jack cheeses.
2 10 oz. packages frozen chopped spinach
1/2 small onion..chopped​
Serves:
Directions:
Melt butter in a 13x9 pan. In a large bowl beat the eggs. Add flour, milk, salt, and baking powder. Mix well. Add the cheese, onion and spinach. Mix well. Pour into baking dish, spreading to make level. Bake 35-40 minutes. Cool...cut into squares. Can be frozen.

*Notes: I cut the salt in half...as is, I think it's too salty. Or maybe you could use unsalted butter and the full amount of salt.

I've also made this with 1 lb. of fresh spinach. This results in a lot less spinach, but they squares are still delicious​

I made these and had a couple squares w/a side salad for dinner tonight.
