Howdy. I bought 3 lbs of peeled garlic on sale at Sam's Club last week. The sell by date is 4/27/07. I know I can't use up 3 pounds by then, but we are garlic-eating fools and the price + convenience was just irresistible.

So, does raw garlic do well frozen? If I roast it then freeze it would that work? I'm open to suggestions, just don't want it to go to waste. I thought about mincing it and storing in oil, but can that cause food poisoning?

I got one of those big jugs of garlic once at Costco. I put it right in the freezer with no problems, just took out what I needed as I cooked. It thawed out as I saute'ed it (it was even easier to slice that way)
