Sweet Onion Salsa Carlos Murphy`s
Ingredients:
1 large sweet imperial onion
3 medium vine ripened tomatoes
1 clove garlic
1 tablespoon fresh cilantro
1 tablespoon fresh parsley
1 tablespoon olive oil
1 tablespoon red wine vinegar
2 tablespoons fresh lemon or lime juice
Directions:
Cut the onions and tomatoes up pretty small the run the whole mixture through a small food processor (to imitate the texture of Carlos Murphy's salsa).
Put together several hours before serving.
