Taco Soup w Bacon and Cactus

Recipe Description
I've been looking for foods that help diabetes lately, and cactus is a good food for stabilizing blood sugar. It tastes like green beans to me. I buy the type that's in a jar with serrano peppers; I'm not ambitious enough to attack a whole cactus leaf just yet. It's really cheap and very healthy.​

1 hour 20 minutes​
½ Lb Hamburger (93% lean)
2 Slices Bacon
½ onion, Chopped
¼ cup Sliced Jalapeno
2 TBSP Minced Garlic
1 Cup Chopped Cactus w Serrano Peppers
1 Can Whole Tomatoes
1 Can Pinto Beans with Jalapenos or Black Eyed Peas with Jalapenos
1 Handful Baby Carrots, Quartered or equivilant amount of large carrots
4 Potatoes, Chopped into Small Pieces
1 Can Corn
¼ tsp Cumin
¼ tsp Red Pepper Flakes
¼ tsp Cayenne Pepper
½ tsp Salt
½ tsp Pepper
2 tsp Chili Powder
Lime juice (to taste)
Tabasco sauce (to taste)​
1. Cook hamburger with onion, garlic, jalapenos, and cactus. Drain.
2. Cook bacon in sauce pan, add to hamburger mixture. Not, too crispy, it should still be fatty-white.
3. In large stockpan, combine all ingredients and cook for 1 hour, or until potatoes and carrots are tender. Stir occasionally. Add Tabasco and lime juice to taste. Great with buttered cornbread​

This recipe piqued my interest. We've eaten cactus from a jar. It reminds me of a mild green chili. Thanks for sharing!
