Taco Soup!

Recipe Description
This taco soup is a home run at our house! It makes a ton and you can freeze leftovers for future use. Use a large Crock pot.
Preparation Steps:
brown meat if you are going to use it
drain fat and add meat to crock pot
sprinkle seasoning packet on top of meat
drain and rinse the beans and add the ENTIRE contents of the tomatoes, water, & sauce
Level of Difficulty:
Easy
Time Needed:
15 prep. 10 hours cook
Ingredients:
2 cans of kidney beans
2 cans of pinto beans
1 can of black beans
1 large can of diced tomatoes
1 can tomatoes and chilies
1 can of tomato sauce
3/4 cup water
1 packet taco seasoning or see recipe for subsitute
1 lb browned ground turkey or hamburger (optional)
shredded cheese and sour cream for embellishment (optional)
Serves:
LARGE!
Directions:
cover and cook on low for 8-10 hours or on high for 4-5. I think the longer you cook soup, the better, so if you have the time, opt for cooking on low.

serve with a handful of shredded cheese and a dollop of sour cream (optional)

I like to serve ours with biscuits because of a corn allergy in our house. You could serve w/ tortilla chips.

Another option is to omit the water, and 1 can of beans and use 2 large cans of corn w/ juice instead.

If you like your soup spicy use the hotter Ro*tel type tomatoes and chilies.

If you don't want to buy taco seasoning packets use this recipe for your taco seasoning:

this looks pretty much like my recipe for taco soup....we love.
Plus it's easy to stretch for guests...an extra can of beans or tomatoes, or whatever.....plus it's a great casual get together dish, I make the soup and have the guests bring the toppings....everyone loves it!

It makes for a fun winter game night get together meal!

It is pretty similair to my taco soup recipe too. The only real difference is that instead of using water and tomato sauce, you use one lg can of tomato juice!

I usually serve it with quesadillas here!

I have this recipe in the crockpot for dinner tonight. I am excited to try it. I did the option of eliminating the water and one can of beans and added corn.
