Tangy Black Bean Salsa

Recipe Description
This is just delish! Eat with taco chips. Or like me, by the bowl full.​
Preparation Steps:
This is SO good! I did not have the tomato= I used 1 can of Walmart fire roasted diced tomato, drained. I did not have the yellow pepper, radishes or cucumber. I used crushed red pepper for the jalapeno. Still came out-tasty.​

Time Needed:
1/2 hour tops!​
~15 oz drained, rinsed can of black beans
~1 large chopped tomato
~1 med chopped onion
~1 sm chopped sweet yellow pepper
~6 chopped radishes
~1 jalapeno pepper, seeded & chopped
~1 med cucumber, seeded & chopped
~2 Tbsp minced fresh parsley
~3 Tbsp red wine vinegar
~3 Tbsp olive oil
~1/2 tsp salt, garlic powder, ground cumin
~1/4 tsp pepper​
makes 4 2/3 cups​
Chop, rinse, drain ingred. In bowl whisk the vinegar, oil & seasonings. Pour over bean mixture & toss to coat.
Cover & refrig for 1 hour. Serve with tortilla chips.
(1/3 c serving=63 cal, 3g fat, 2g protein, 7g carb, 2g fiber, 144mg sodium, 1/2 starch & fat eat up!)​

Today I added a can of chick peas, drained & rinsed to the salsa. Just so good.......
