Tenderloin with peppercorn cream for two

2 tenderloin steaks
salt and pepper
1 tbsp olive oil
1/4 c brandy
1 lg clove garlic
1 tsp peppercorns -- crushed
1/2 tsp dried oregano
1/8 tsp salt
2/3 c whipping cream
1 1/2 tbsp sour cream

Season steaks with salt and pepper.
Sear steaks in hot pan with olive oil then remove from pan to broiling pan and broil, 5 1/2" from heat, with door slightly open for 5-7 min each side.

Add brandy to pan dripping from steak and deglaze.
Add minced garlic, peppercorns, oregano, and salt.
Cook 1 minute.
Add cream and boil for 6-7 minutes or until reduced by half.
Remove from heat and stir in sour cream.
Serve sauce over steaks.

Can't afford the brandy but I'll think this sounds so yummy ! and dinner for two is just right.... the dkds can have corndogs.... LOL

To tell you the truth, I buy the small individual bottles of liquor for my cooking. DH and I do not drink. SO when I need liquor for any of my recipes, I use the "single serve" size.
