Recipe Description
I have no idea where the name for this comes from. It was a mornay that my mums friend used to cook for our Mornay and Cards nights when we were kids.

We normally serve this on toast but you could serve it with vegies.

The amount of curry powder can be adjusted for personal taste. The amount in this recipe is for flavour but not heat.

Other vegies like peas and beans can be added too.

This is a great recipe to make ahead of time. It reheats well and like most things is always better the next day.​
Preparation Steps:
I use a large saucepan to make this.
Have everything ready to go for ease.​

Time Needed:
1 hour at a guess​
Ingredients:
500g beef mince (hamburger)
1 onion, chopped
1 carrot, grated
1 zucchini, grated
2 teaspoons curry powder
1 cup short or medium grain rice, uncooked
1 lg can (825g) condensed tomato soup​
Serves:
4​
Directions:
Fry off the onion, carrot and zucchini until onion is tender.
Add in the mince and cook, breaking mince up as it cooks, until browned.
Add the curry powder and cook off for a minute.
Add in the rice and stir to mix well.
Add in the tomato soup and half a can of water.
Cook, stirring regularly so the rice doesn't stick to the bottom, until rice is tender, usually about 45 minutes.

Either serve from the pot or if cooking ahead of time place in a casserole dish and top with crushed potato chips.​

It sounds really good. Minus the zuccunni, it is almost the same recipe that I put into my stuffed peppers! I was curious about the recipe ever since I saw you list it a few weeks ago on the whats for dinner thread! :hubba: Might have to give it a try!
