Please post your tried and true crockpot recipes for chicken in this thread.

These are recipes that you have actually made before and are known to be good. Please don't post any that you haven't tried yet. Thanks! :D

I made chicken a few times.

Place 4-5 pieces of chicken in crockpot
season with
black pepper
cayenne pepper {if you like a little spice}
season salt
the chicken comes out juicy & tender.

Thanks girls. :) Summercat, do you need to add any liquid to that or does the chiken make it's own?

Salsa Chicken. :hungry:
Take some skinless (and preferably boneless) pieces and lay in the bottom of the crock. Dump a jar of salsa over them. Cover and cook on low until done. Serve over rice.

I also do the same with spaghetti sauce and serve it over pasta. :lip:

How's that for painfully easy? :D

I don't remember where I got this one but it's good and filling. Texture is a bit mushy but it tastes really good.

Crockpot Casserole (good)

1-1/2 pounds lean ground beef (or turkey or chicken this also works well with Morningstar crumbles)
3/4 cup diced bell pepper (mix of green and red, if possible)
3/4 cup chopped onion
1 package brown gravy mix (or mushroom or onion; I use McCormick)
4-6 medium red or white potatoes (creamers), unpeeled and diced (about 4 cups)
2 Tbsp. butter or margarine, melted
1 can (15 ounces) whole kernel corn, drained (or 2 cups frozen)
1 can (15 ounces) creamed corn
salt and pepper to taste

Brown ground meat with peppers and onions; drain well. Place meat mixture in crockpot; sprinkle gravy mix over meat mixture. Toss diced potatoes with melted butter to coat and add to crockpot. Add both cans of corn. Add salt and pepper to taste. Cover and cook on LOW 6-8 hours; adjust seasoning as needed. Yield: 4-6 servings
Recipe Notes:
This is good served over chinese noodles or rice, or try egg noodles.
