Fortunately for me, my wife is on the Atkins diet. I bought 5 lbs of bananas last week
(she can't eat them) and they are getting ripe.
The following, after the picture, is how I made this from scratch.



Banana pudding, (well, pie filling, but I won't tell)
2 1/2 c milk
3/4 c sugar
1/4 c corn starch
1/2 tsp salt
3 eggs
3 bananas
2 tsp vanilla
1 tbsp butter

put all ingredients except vanilla, butter, and 2 bananas in blender and blend it.

dump it in a 2 qt sauce pan - put the heat on medium.

stir like the dickens until it starts boiling.

turn heat off and stir in vanilla and butter.

slice one banana and stir in.

Slice the other banana and float the slices.

Put a little cinnamon on if you want.

Take a picture and let it cool.


(since I'm eating it all, I left it in the pan. I will try to be a good boy
and eat it in 2 or three sittings...no promises tho')

Looks delicious. I can also "smell" it because mom used to make stuuf like this when I was a child. Enjoy for both your wife and I as i am dieting too.

~I make mine almost the same way but I don't use eggs. Love the stuff and your picture is making me hungry! :hungry:~

So one banana is blended in? One is stirred in and one is sliced? Looks delicious.

Well, it's gone ...made it to 2 sittings. If I did it again (maybe in a day or two) I'd put a little honey on it just before I ate it.

Oh my...that looks so good...
AND I have just happen to have several bananas that are getting too ripe...need to do something with them....:teddy2:
