2 lbs ground beef
1 chopped onion
1 cup barbecue sauce
1/2 cup (2 oz) shredded Cheddar cheese
1 tablespoon brown sugar
16 oz can baked beans


Place all ingredients in slow cooker. (Browning ground beef is optional). Cover and cook on low for 6 to 8 hours. Serve with buttermilk biscuits.

Taco Stew

2 lbs ground meat
4 cans stewed tomatoes (liquefied in blender)
3 cans pinto beans (drained and rinsed)
3 cans hominy or corn (whichever your family prefers)
2 packets of taco seasoning
2 packets of dry hidden valley ranch dressing mix

Brown meat and drain grease, add taco seasoning packets
(follow directions on package). Liquefy stewed tomatoes in blender,drain beans and corn/hominy and rinse. After meat is ready, add all ingredients to crock pot. Simmer on low for 4 hours or longer. Thelonger it simmers the better it is.

This is a great recipe in the winter, but is good year round. Cornbread or warm tortillas also go very good with this.

**optional---if you like a little spice substitute 2 cans of stewed tomatoes with rotel (also liquefy in blender)


EZ Slow Cooker Chicken Cacciatore

7-1/4 skinless, chicken breast or thigh halves
1-1/4 (28 ounce) jars spaghetti sauce
2-1/2 green bell pepper, seeded and cubed
9 ounces canned mushrooms, sliced
1-1/4 onion, finely diced
3 tablespoons minced garlic

Put the chicken in the slow cooker. Top with the spaghetti sauce,green bell peppers, mushrooms, onion and garlic.
Cook on low for 7 to 9 hours. Serve over angel hair (or
regular pasta) and crusty bread.

Cream Cheese Crockpot Chicken

1 frying chicken, cut up (I use about 8-10 skinless thighs)
2 tbsp melted butter
salt and pepper to taste
1 package of dry Italian salad dressing seasoning mix
1 can cream of chicken soup
1 8 oz brick of cream cheese, cut up in cubes
1/2 C chicken broth
1 large onion
crushed garlic to taste


Brush chicken with butter and sprinkle with the dry Italian seasoning
(I did two layers in my crockpot to make sure that the Italian
seasoning got on all the chicken
and not just those pieces on top.)

Cover and cook on low for 6-7 hours.

About 45 minutes before done, brown the onion in the butter and then add the cream cheese,soup, and chicken broth to the saucepan. Add the crushed garlic and stir all ingredients
until smooth. Add salt and pepper to taste.

Drain some of the liquid in the crockpot (about half) and pour sauce mixture over chicken in crockpot and cook an additional 30-45 minutes.

Remove chicken to platter and stir sauce before ladling some over the chicken nand serving the rest in a gravy boat.

Serve over pasta.

Slow Cooker Lasagna

This recipe is so easy, you might think that you are
doing something wrong. It is delicious! Makes 10 servings.

1 pound ground beef
1 onion, chopped
2 teaspoons minced garlic
1 (29 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 1/2 teaspoons salt
1 teaspoon dried oregano
1 (12 ounce) package lasagna noodles
12 ounces cottage cheese
1/2 cup grated Parmesan cheese
16 ounces shredded mozzarella cheese

1 In a large skillet over medium heat cook the ground
beef, onion, and garlic until brown. Add the tomato sauce,
tomato paste, salt, and oregano and stir unti well
incorported.Cook until heated through.
2 In a large bowl mix together the cottage cheese, grated
Parmesan cheese, and shredded mozzarella cheese.
3 Spoon a layer of the meat mixture onto the bottom of
the slow cooker. Add a double layer of the uncooked
lasagna noodles. Break to fit noodles into slow cooker. Top
noodles with a portion of the cheese mixture. Repeat the
layering of sauce, noodles, and cheese until all the
ingredients are used.
4 Cover and cook on low heat in slow cooker for 6 to 8 hours.

Slow Cooker Hot Fudge Sundae Cake

1 c all-purpose flour
1/2 c granulated sugar
2 T baking cocoa
2 t baking powder
1/2 t salt
1/2 c milk
2 T vegetable oil
1 t vanilla
1/2 c chopped nuts
3/4 c packed brown sugar
1/4 c baking cocoa
1 1/2 c hot water

Spray inside of 2 to 3 1/2 quart slow cooker with cooking spray. Mix flour, granulated sugar, 2 T cocoa, the baking powder and salt in medium bowl. Stir in milk, oil and vanilla until smooth. Stir in nuts. Spread batter evenly in slow cooker. Mix brown sugar and 1/4 cup cocoa in small bowl. Stir in hot water until smooth. Pour evenly over batter in slow cooker. Cover and cook
on high heat setting 2 hours to 2 hours 30 minutes or until
toothpick inserted in center comes out clean. Turn off slow
cooker. Let cake stand uncovered 30 to 40 minutes to cool
slightly before serving. Spoon warm cake into dessert dishes.
Spoon sauce over top. Makes 6 servings.

A rich hot fudge sauce forms while the cake bakes.

Spicy Soup

1 pound ground beef
4 medium carrots -- scraped and cubed
4 cups potatoes -- peeled and cubed
1 small onion -- chopped
3 8 oz cans tomato sauce
4 cups water
2 teaspoons salt
1 1/2 teaspoons pepper
1/2 - 1 teaspoon hot pepper sauce
I use 5 carrots. It normally takes 7 medium sized potatoes
to make 4 cups.

CROCKPOT: Put hamburger in crock and place in microwave
and cook on full power for about 4 minutes. Take crock out
and mash up hamburger with potato masher (the old fashioned
kind, not the newer round kind); put back in microwave and
nuke for another 4 minutes, take out and repeat mashing
process; return to microwave for another 2 minutes. I used
hamburger that was 90% lean so there was really no fat to drain
off. Put crock into the crockpot. Add carrots and potatoes. Put some of the water from the 4 cups in the blender and put the onion in there and chop it up; pour into crockpot. Pour in tomato sauce; use some of the remaining 4 cups of water to
rinse out the cans and pour into soup. Add salt, pepper, and
hot pepper sauce (I used 1 teaspoon of Louisiana Hot Sauce).
Stir well. Turn crockpot on high and cook for about 3 hours
on high. Reduce setting to low and cook for another 5 hours.
Stir the soup often.

TOP OF STOVE: In a Dutch oven or large kettle, brown
ground beef. Drain. Add potatoes, carrots, onion and tomato
sauce. Stir in water, salt, pepper and hot pepper sauce; bring to a boil. Reduce heat and simmer for 1 hour (Barbara said she let it cook for more than 1 hour) or until the potatoes are tender and the soup has thickened.
YIELD: 6-8 servings -- 2 quarts



1 lb. Mexican Velveeta
1 lb. of ground beef
14 oz. chunky salsa
Put cheese and salsa in Crock-Pot on low heat. Brown and drain ground beef.
Add to Crock-Pot. Heat for 1 hour, then mix the ingredients in the Crock-Pot.
Heat for 1 more hour. Spoon over tortilla chips.

Crock Pot Mexican Soup


1 lb. ground chuck 8 cups chicken stock
1 chili pepper 4 tbs. flour
1/2 lb. spinach, chopped 4 carrots, grated
3/4 cup Minute rice 1/4 lb. ham chopped
1 tsp. garlic powder 1 egg
1/2 tsp. oregano 1 tsp. sugar
2 tbs. parsley flakes


Mix beef, 1/2 cup stock, flour and egg. Shape into small balls. Put remaining stock, chili pepper, carrots and rice in crockpot on high until it simmers. While simmering add meat balls, cover and cook 1/2 hour on high.
Turn heat to low and cook 3 hours. Add remaining ingredients & cook for 20 more minutes.

Italian Chicken and Potatoes

2 boneless, skinless chicken breasts
1/2 cup Italian salad dressing
1 teaspoon Italian seasoning (or mix basil, oregano, crushed red pepper, and
garlic powder to equal same)
1/2 cup grated Parmesan or Romano cheese
4 potatoes, peeled and cut into wedges

Place chicken in bottom of crock pot. Sprinkle with half of the Italian dressing, spices, and the grated cheese. Put the potatoes on top or around the chicken. Sprinkle with the rest of the dressing, spices, and cheese.
Cook on low for about 6-8 hours, or until the chicken and potatoes are tender.

Creamy Ham and Broccoli
Makes 4 servings

1 lb cubed cooked ham
1 lb of broccoli, chopped into bite size pieces
1 can condensed cream of mushroom soup
8oz of processed cheese (like Velveeta
1 c instant rice
1 c milk
1/2 c chopped celery
1/2 c chopped onion
1/4 tsp pepper

Place all ingredients in the slow cooker. Stir. Smooth top, making sure rice is well into mixture.

Cover. Cook on high 2-1/2 hours or on low 4 to 5 hours. Stir occacionally if possible.

Creamy Crockpot Onin Roast

3 lb roast, trimmed -- up to 4 lbs
1 can cream of mushroom soup
1 envelope onion soup mix

Put the roast in the crockpot, dump the onion soup on top. Top with the undiluted creamed soup. Cover and cook on Low for 10-12 hrs. Remove the meat and keep warm. Mix 2 Tbsp. of cornstarch to 3 Tbsp. of water. Add to the juices
in the pot. Turn on High and cook for additional 15-20 min.


8 ounces elbow macaroni, cooked and drained
4 cups(16 ounces) shredded sharp Chedder Cheese
1 can (12 ounces) evaporated milk
1 1/2 cups milk
2 eggs
1 teaspoon salt
1/2 teaspoon black pepper

Place the cooked macaroni in crockpot that has been sprayed with nonstick cooking spray. Add the remaining ingredents, all except 1 cup of the cheese, mix well. Sprinkle with the remaining 1 cup of cheese and then cover and cook
on low setting for 5 to 6 hours or until the mixture is firm and golden around the edges. Do not remove the cover or stir until it has finished cooking.

Crock Pot Sloppy Joes

2 lb. ground chuck
1 tsp. garlic powder
3 tsp. sugar
2 pkg. sloppy joe seasoning
1 bottle BBQ sauce
1 chopped onion
1 tsp. liquid smoke
1 tbs. canola oil
1 tsp. Worcestershire sauce
1/4 tsp. dry mustard

Brown ground chuck & chopped onion in 1 tbs. oil. Drain & pour into crock pot. Combine remaining ingredients & pour over meat mixture. Stir to mix. Cook on high for 3 to 3 1/2 hours or low for 6 to 8 hours. Serve on hamburger buns

Bacon Chicken Breasts

6 Boneless Chicken Breasts (Frozen)

12 Slices raw bacon

1 Can Condensed Cream of Chicken Soup

1 Box Stuffing Mix

6 Slices Swiss Cheese

Spray crock pot with cooking spray Place box of stuffing mix on bottom, add flavor packet Wrap each frozen breast with 2 slices of bacon. (You can use Canadian bacon slices too for this) Place on top of stuffing mix (this is still dry at this point) Pour can of soup over top chicken. Cook on low all day (7-10 hours) or HIGH of 5-7 Hours 15 minutes before serving place cheese slices on top to melt.

Easy Crockpot chicken

4-5 pounds chicken breasts
1-2 large cans of tomatoes
1-2 envelopes onions soup mix
Salt and pepper to taste (can use garlic salt)
Place in crockpot on low for 6-8 hours, and serve over rice or noodles
