Recipe Description
vegan roasted veg sandwich​
Preparation Steps:
slice thin veg of choice
get olive oil
line cookie sheet with aluminum foil for easy cleanup​
Level of Difficulty:
Easy​
Time Needed:
1 hour​
Ingredients:
zucchini
carrots
optional: fresh garlic cloves
any veg of choice
toasted whole wheat bread or rolls
olive oil​
Serves:
whatever you want it to be​
Directions:
slice vegetables lengthwise, toss with a lot of olive oil. shallow layer in pan, bake at 400 until golden browned. i used the excess olive oil that the veg cooked in as a dressing for the bread.

i made a roasted vegetable sandwich. nummy.
good with or without garlic.​
