Whole wheat bread
Homemade or storebought hummus (I used homemade)
Mayo
Sliced veggies- cucumber, tomato, red onion.
Raw spinach leaves
alfalfa or other bean sprouts (I was all out, will use next time)

Toast whole wheat bread very lightly so it isn't too dry. Spread hummus on one slice and mayo on the other. Top with veggies, and enjoy!
My daughter even loves it! (sorry for spelling sandwiches wrong, oops)

I should have added a few slices of pepper, I will try that tomorrow on a pita bread for lunch at work! Thanks for reminding me. I need to use up my last baby bell pepper. I never used to like them until recently. I had some good fajitas that changed my mind lol!

Try it with roasted red peppers. Lots of brands are now offering roasted red pepper hummus. There's a lemon and dill flavored hummus that I love too.

I already do this with just the hummus and toast. I think I'll add cucumbers and bell peppers to mine when the ones in my garden ripen.
