...and we survived!

I know it doesn't sound like much to many of you who probably use evaporated milk all the time, but my dh has never been willing to try it.

I bought about 5 cans for .10 each a long time ago and it has sat in my pantry ever since. Tonight, I was making Hamburger Helper for dinner, and had already added almost all of the ingredients when I realized that I needed milk. However, we are out of milk. Dh actually suggested that I try the evaporated milk. I did, nothing tasted different, and we survived! I'm hoping that this is that start of a beautiful friendship between cooking with evaporated milk (which I can get SO much more cheaply than the milk we drink) and my family!

I use evaporated milk in my mashed potatoes, when making white sauce, in pumpkin and any type of custard pie. I reconstitute it with half water first. It makes the best hot cocoa I've ever tasted.Half evaporated milk, half water, Nestles instant cocoa and a bit of sugar. Top with marshmallows if desired.

I never think of using evaporated milk when I run out. What am I thinking? :bang: I need to follow your lead.

I use it all the time too (silly me, figured everyone did!)...mashed potatoes, white sauce, as someone said above, and mac n cheese (even the boxed kind) It makes everything creamier! Great in corn chowder too :) MMMMMM!
