split pea soup. I had the onions, the carrots, the celery, the garlic, the broth......
and I went to get my split peas soaking for a bit this afternoon, and uh-oh... only 1/2 cup of them. UGH I needed 2 1/4 cups.
soooooo, I used lentils to make up the difference!!! then, I went to go get a potato for my soup, and uh-oh, NO POTOATOES~.... so I used cauliflower instead!!

and it was de-lish!!!
that, and homemade cornbread!

but the part of this whole thing that really struck me is how I have learned to "drop back and punt", or make do, over the years. It saves so many ways, time, money, less waste. I really felt good about our meal tonite.
