If you want to take smoked meat to the next level, I would suggest smoking a meat and making something out of it instead of just eating the smoked meat outright (which is pretty dammmed awesome as it is). I would suggest Smoked Chicken Enchiladas. Smoke two whole chickens, then take all the meat off the bones and find a good enchilada recipe. I've made them many times (and didn't always follow the same recipe) and it always turned out great. The smoked chicken flavor is way better than anything you can get in a restaurant.
