I have seven cans of evaporated milk that are going to expire soon. I think I'll make a pumpkin pie, and I seem to recollect that evaporated milk can be a part of homemade macaroni & cheese.

Do you have any other ideas for me?

You can use evaporated milk mixed with an equal amount of water in any recipe that calls for milk. You can also use it in your coffee. I usually use it when mashing potatoes, in puddings, white sauce, macaroni and cheese, tuna noodle casserole, in pancake and waffle batters, and cream gravies.

My homemade fudge recipe calls for it and for any sauce or recipe you use that calls for milk it works great. It is also really good in coffee.

- And on your macaroni idea, I bet you could make a cheese sauce just by simmering it with grated cheddar.

Does evaporated milk really 'expire'? Isn't the date really just a 'best if used by'? I wouldn't fret too much if you don't use it BY the date, just use it ASAP. And as stated above, you can use it in anything that calls for milk....mac and cheese, tuna noodle casserole, cream soups (potato soup sounds good to me right now), etc. In fact, my meatball and meatloaf recipes call for evaporated milk.

I'm not real tight on those dates either, but it's technically today. I've used one can. I'll try to use the others in the next 6 - 8 weeks or so. :)
