This recipe makes a big pan and can easily be halved. You can make it less spicy by using a mild taco mix and salsa. Also can be made ahead as long as you let the meat mixture cool down a bit before you put it all together. Just bake a little longer.

Taco Twist Casserole

2 lbs ground beef
1/2 green pepper, chopped
2 pkgs taco seasoning
28oz. can tomato sauce (may add more if it looks a little dry to you)
3/4 c salsa
16 oz. corkscrew macaroni, cooked & drained
2c shredded cheddar cheese, divided
1c sour cream

Cook beef and pepper til done, drain.
Add sauces and taco mixes , simmer on low 5 min.
In large pot you cooked pasta in (to save on dish washing, lol) mix pasta and sauce together, add 1 cup of cheese and all the sour cream.
Spray 13x9x2 pan and pour mixture in . Top with remaining cheese and bake 350° for 30 min or until bubbly. Enjoy.

I am making a fresh strawberry pie for dessert and the taco twist casserole recipe I got from another board, for dinner tonight!
