Making baked pork chops marinated in onions, thyme and beer. Will throw a fee potatoes and carrots in the dish at the same time. Only one dish to clean afterwards!

Libby: I used coors light. Whatever beer is in the house works. I soakedthe meat overnight. Baked the whole thing covered for an hour, but it was too long, the veggies were good but the meat was dry. Also, I sometimes assemble the meat, beer and seasoning in a freezer bag and freeze it. You can also cook this in the cp.

don't know about the chicken tacos yet, still waiting on dh to come home. Tried the mexican rice, TOO salty. Called for a tea. garlic salt, next time I'll use powder and low sodium chicken broth. I'm about ready to toss it and make another batch but hate to be wasteful.
