Our garden has exploded with romaine lettuce. I wanted to stagger the plantings- Dh wanted to plant it and get it over with. Now we will be eating it for weeks and practically begging people to bring some home with them. Only so much you can do with romaine lettuce,lol. If anyone has recipes using that ingredient besides salads, please let me know.

I did a search and found these recipes.

Enlightened Caesar Salad

I try to minimize the use of products like egg substitute but in this dish it works perfectly well, helping to keep fat and calories down.
Makes 4 to 6 servings

Olive oil cooking spray
2 cups French bread, cut into 3/4 inch cubes
2 cloves garlic
3 anchovy fillets
2 tablespoons egg substitute
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1/2 tablespoon Worcestershire sauce
A few drops of Tabasco
1 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper to taste
1/3 cup grated Parmesan cheese
1 large head romaine lettuce, cleaned and torn into bite-size pieces

1. Spray a baking sheet with olive oil cooking spray.
2. Spread French bread cubes evenly on the sheet.
3. Spray tops of the croutons and put in preheated 350F oven.
4. Cook 10 minutes, tossing once.
5. Turn off the oven and leave the croutons inside for 15 minutes. Cool.
6. With the motor of a food processor running, put garlic down the feed tube.
7. Scrape down the sides and add anchovy fillets.
8. Scrape down again and add remaining ingredients except cheese and lettuce.
9. Put into small bowl and fold in cheese.
10. Put lettuce in a wide salad bowl with croutons.
11. Add dressing and toss.
12. Taste and adjust seasonings. Toss again.

Title: ROMAINE LETTUCE WITH OYSTER SAUCE
Categories: Chinese, Salads
Yield: 4 servings

1 Head romaine lettuce
1/4 ts Salt
2 tb Peanut oil
1 tb Premium oyster sauce

We decided on romaine lettuce for this dish because it
is crisp textured, and readily available.

Preparation: Wash & remove core from lettuce.
Combine oil & oyster sauce in small sauce pan; bring
to simmer; keep hot until ready to serve.

Blanching: Heat about 2 gallons water in large pot.
We use bottom of aluminum steamer. Add salt. When
water reaches rolling boil, blanch lettuce for about
20 seconds - until leaves are bright green.

Remove leaves, shake off excess water. Stack leaves &
cut cross-wise into 4 parts. Use cleaver to place
leaves on serving platter. Pour hot oyster sauce on
leaves. Serve.

Grilled Romaine Lettuce BBQ Recipe

Grilled lettuce? You bet! Try it with this wonderful Asian-inspired sauce and you won’t believe your taste buds!


1/2 cup soy sauce
1-1/2 tablespoons sesame oil
2 tablespoons dry white wine
1 tablespoon packed brown sugar
1 tablespoon grated fresh ginger
3 small heads romaine lettuce, cut in half lengthways


In a blender or food processor process soy sauce, sesame oil, wine, brown sugar, and ginger until thoroughly combined.

Brush lettuce with marinade. Place lettuce, cut sides down, in centre of cooking grate. Grill 5 to 7 minutes, turning and brushing with marinade halfway through grilling time.

Makes 6 servings.

Tonight dh and I are having lamb chops on the grill, plus green beans, and maybe some potato packets. Dss will probably eat a quick sandwich as he has baseball tonight and it's lawn mowing night (if the rain holds off).

Thanks Dee, so far we've been having Ceasar salad everynight.
That bbq. recipe sounds good. Darn that Jack, now he has me contemplating lettuce juice.
My nose is starting to twitch. :bunny:

Darlene, we buy breaded chicken strips from Sams (not extremely frugal but beats ordering from the Dairy Queen) and will make a crispy chicken salad on those nites when neither of us wants to cook. We have all sorts of lettuce, spinach, cucumbers, tomatoes, peppers and then the fried chicken strips cut up on top. YUM. Maybe you could use some of the romaine in that?

We're having clean out the refriderator day for the next couple of days. The dd's were home over the weekend and we have lots of leftovers. :yippee:

I don't have any ideas for you Darlene. Sorry! We have lettuce coming out our ears here too!:toothy:

As for dinner tonight we are having lake trout (from our fishing trip), green salad with choice of dressings (I'm having huckleberry vinigrette, yum), rice and cantaloupe.

We are having crockpot swiss steak ,mashed potatos, and salad:toothy: Probably ice cream or leftover cake for dessert:)

Pork Tenderloin on the grill { with the "Lupos Speidi Sauce} This is the one Deed wrote about....hmmm delicious! Lettuce salad..from the garden & maybe baby macaroni with butter & salt & pepper. Fresh fruit salad for dessert. Have a great day all. ;)

Liz~I would love to have some of the fruit salad. I haven't had that in a long time. Sounds yummy!!

We are having fajitas! This is one of Chris' favorites.

Chopped tomatoes, green, yellow and orange peppers with olive oil and garlic sauteed with sausage over pasta. So quick!

I use romaine for just regular garden salads. I just like it better than any other lettuce so I guess that's why.

I also use it for sandwhiches, and sometimes I'll just wrap up some turkey slices or spread some peanut butter on it for a quick snack.

Oh, for dinner tonight ayla and I are having strawberries and mac n cheese...i think i'll boil some veggies too.
