I've got a crockpot full of black beans cooking that we'll use along with some leftover chicken for burritos tonight and then use the leftover beans for rice and beans tomorrow.

I may also get some muffins made for this next week's breakfasts.

I made cornmeal crusted tilapia with HM tartar sauce, steamed asparagus, and creamy orzo with ham and peas.

Tonight it is pork cutlets, mashed potatoes, and corn.. The rest of the weekend is still out..lol

Huge chicken in the slow cooker. We'll have that with mashed potatoes, gravy, steamed brocoli and carrots for dinner.
The I'll bone the chicken, split it and freeze it for dinners later on. I'll also make a pot of soup with the broth.

I had salmon on Saturday and a turkey burger on Sunday. Lots of veggies and fruit. Had a couple of smoothies with cherries, berries, and mangoes. Probably ate too much but it was all healthy.
