A couple of days ago I made Burrito Casserole and it used 1lb of ground beef and my package was 1.5lbs so since I had the oven going anyways I made my Meatloaf for 2 and cooked it along side my casserole. Tonight I'll heat up the meatloaf and serve it with some mashed potatoes & probably corn.

Tonight will be

Turkey meatballs, made with oatmeal instead of bread crumbs
Low carb pasta
Pasta sauce
Focaccia bread, hot from the oven

Hmmm.....Now that I'm writing this, it sounds very starchy. May have to rethink this menu and add some vegetables to the sauce? On the bread?

Any ideas?

I have

a small can of spinach
carrots
onions
a large can of tomatoes
yellow and orange peppers
canned string beans
canned peas

fruit
apples
grapefruit

Grilled Chicken/veggie kabobs (warm enough to do on outdoor grill)

Boneless pork chops, veggie medley, and maybe some sort of potato.

And I made a batch of sauteed cabbage with onions, carrots and celery with a little pork sausage in it for flavor. I might have just this as I love it more than the rest of the menu items. :)

Leftover pinto bean sloppy Joe's for me. Everyone else found whatever. :) My 13 year old step daughter made grilled Tilapia.
