Since it's Ash Wednesday, DH is meatless, so I'm going with pancakes. The kids are thrilled, and even though he's not a fan of breakfast for dinner, he's going with it. It's going to be a VERY easy cooking night for me! :clap:

We're Catholic and today is Ash Wednesday so I am making the same dinner I've eaten on Ash Wednesday my entire life, my Mom's Baked Macaroni and Cheese (I'm posting the recipe in the cookbook forum if anyone is interested in it). On the side will be a salad and I'm going to try a homemade recipe for Raspberry-poppyseed vinaigrette that I saw in the Penzey's Spices catalog.
