Off-season, even one week off their regular season and discounts are every where. Send for brochures, most of them have discount cards or coupons in them. Pack what you need to avoid impulse buying on the way or once there. Even the best hotels will put a mini fridge in your room if you ask, so I always pack drinks and snacks, fruit, even cereal so we don't go out for breakfasts so much. Make sure you take the necessities, sweater, umbrella, extra sneakers-all the things you might need to pick up there. If your going to a beach or swimming make sure you have nice towels, beach blanket and if the kids are coming have a few of the dollar store blow-up beachballs/toys etc. so they don't beg for the overpriced ones in the shops.
The best thing I do when I'm flying and want to pack light is I take full size 1/2 empty bottles of shampoo etc. so I use it when we are away, then toss the empty bottles and have extra space left in my carry-on for things I've bought while away.
