Whole Wheat Chocolate Honey Banana Muffins


Recipe Description
A not so 'in your face sweet' banana muffin recipe using whole wheat flour and honey to sweeten them.

Moist and flavourful 'healthy' muffins :)
Preparation Steps:
Preheat oven to 325*F

Grease or line muffin pans and set aside.​

Time Needed:
25-30 minutes (approx)​
Ingredients:
3-1/2c whole wheat flour
1/2c cocoa powder
2 tsp baking soda
1-2 tsp ground allspice
1 tsp salt
2/3c olive OR canola oil
1c honey
4 eggs
2c mashed ripe banana's
1/2c hot water
1 tbsp vanilla​
Serves:
24 medium/large muffins​
Directions:
Assemble all dry ingredients in a bowl - mix thoroughly so that everything is evenly distributed.

(I used a whisk to blend everything evenly in the bowl)

In a separate bowl, beat oil and honey together, add eggs and beat well.

Add banana's, vanilla and hot water and beat to combine.

(It will look watery)

Blend the dry ingredients into the wet.

Optional: add chocolate chips or chopped walnuts if desired

Spoon batter into the greased/lined muffin pans.

Bake at 325*F for about 18-22 minutes or until inserted toothpick comes out clean.

Remove from oven and cool on rack.

Enjoy!

I found they tasted better later on in the day or the second day - the banana & cocoa flavour really shines through.

Note: I only used 1/2 - 3/4c of honey (buckwheat) b/c thats all I had on hand. :)

They really look good.

I once used a virgin and very green olive oil in a bread recipe that I used for sweet rolls.... so I would recommend the canola oil. LOL
