I saw a recipe for potato soup and thought I doctor it up a bit. Here's what I did:

Cut 1 lb of bacon into 1/2 inch pieces and cooked in my soup pot.
Pulled 1/2 cup out for garnish. Left rest in and added 2-3 stalks of celery, 1/4 lb of carrots and 2-3 onions (cut up) and cooked until soft. Added 2 qts of chicken stock and 3 lbs. of potatoes (diced) and brought to a boil. Simmered until potatoes were soft. Added 2 c milk and salt & pepper to taste. Blended until smooth with my stick blender and heated through. Put in bowls and topped with sour cream, cheddar cheese, chives and bacon bits. Yummo! Make sure to scrape the yummy bits of bacon "stuff" from the bottom when adding the stock.

Well that recipe was a keeper from the first word: Bacon...
