Zucchini Casserole

Ingredients:2 lbs. sliced zucchini
1/4 c. chopped onion
1 can cream of chicken soup
1 c. sour cream
1 c. shredded carrots
1 8oz. pkg. herbs seasoned croutons
1/2 c. butter

Directions:In a saucepan, cook sliced zucchini and onions in boiling water for 5 minutes. Drain. Combine cream of chicken soup and sour cream. Stir in shredded carrots. Fold in drained zucchini and onion. Combine croutons and butter. Spread half of croutons in bottom of baking dish. Spoon vegetable mixture on top. Sprinkle remaining croutons over the top. Bake at 350* for 25 to 30 minutes. Makes 6 servings.
