It is like this every year. Either the zucchini plants do not grow at all, or you cannot save yourself from the crowd.

Today I filled the size and served it with tomato rice for lunch. This is a delicious and very inexpensive summer meal without meat.

The ingredients for 3 people are:

a large or 2 smaller zucchini
2 onions
1 clove of garlic
approx. 15 g grated cheese
2 eggs
some tomato paste or ketchup
Salt pepper
approx. 400 ml tomato juice
3 tablespoons of red lentils

The preparation

Hollow out zucchini

Fry onions and garlic, deglaze with approx. 150 ml water and add to the lentils. Bring the lentils to the boil and let them cook for 10 minutes.

Fry the hollowed-out zucchini in a little oil.

After frying, you can easily crush the balls with a fork.

Then mix the lentil mixture, the zucchini inside, the eggs, the cheese, salt, pepper and some tomato paste or similar. (*) it is in the zucchini.

(*) I took some of the reduced tonate juice that I still had from the cauliflower pizza.

Now place this in an ovenproof mold and pour in approx. 100 ml tonate juice.
After 45 minutes in the oven at 180 ° C, the surface is slightly crispy brown.

Oh, the rice:
A 3/4 cup long grain rice is cooked with 4 times the amount of tomato juice and salt using the cooker-off method.
